🔥 రొయ్యల ఇగురు (Royyala Iguru) – Traditional Andhra Prawns Curry (Godavari-style)

Royyala Iguru is a delicious, spicy, and flavorful Andhra-style prawn curry. This Godavari-style dish is made with fresh prawns, onions, tomatoes, and aromatic spices, making it a perfect side dish for rice, chapati, or roti.

📌 Ingredients

For Cleaning Prawns:

  • 500g fresh prawns (peeled & deveined)
  • ½ tsp turmeric powder
  • ½ tsp salt
  • 1 tbsp lemon juice

For Curry:

  • 2 tbsp oil (gingelly oil or sunflower oil)
  • 1 tsp mustard seeds
  • 1 tsp cumin seeds
  • 1 bay leaf
  • 2 onions (finely chopped)
  • 1 tbsp ginger-garlic paste
  • 2 green chilies (slit)
  • 2 tomatoes (finely chopped)
  • ½ tsp turmeric powder
  • 1 tsp red chili powder
  • 1 tsp coriander powder
  • ½ tsp garam masala
  • ½ tsp black pepper powder
  • Salt (to taste)
  • ½ cup coconut milk (optional, for rich flavor)
  • 2 tbsp chopped coriander leaves

👨‍🍳 Preparation Steps

Step 1: Clean the Prawns

  1. Wash the prawns thoroughly with water.
  2. Add turmeric powder, salt, and lemon juice. Mix well and let it rest for 10 minutes.
  3. Rinse again with fresh water and drain completely.

Step 2: Prepare the Masala

  1. Heat oil in a pan and add mustard seeds, cumin seeds, and bay leaf.
  2. Add chopped onions and sauté until golden brown.
  3. Add ginger-garlic paste and fry until the raw smell disappears.
  4. Add green chilies and chopped tomatoes. Cook until tomatoes turn soft.

Step 3: Cook the Prawns

  1. Add turmeric, red chili powder, coriander powder, salt, and mix well.
  2. Add cleaned prawns and stir-fry for 2–3 minutes on medium heat.
  3. Cover and cook for 5 minutes until prawns release their juices.
  4. Add black pepper powder, garam masala, and mix well.
  5. (Optional) Add coconut milk for a creamy texture. Cook for another 5 minutes.

Step 4: Garnish & Serve

  1. Add fresh coriander leaves and turn off the heat.
  2. Serve hot with steamed rice, chapati, or roti.
